Spinach Paratha

Ingredients:
  1. Bunch of spinach
  2. Wheat flour
  3. Cumin seeds
  4. Green chilies
  5. Ginger
  6. Garlic
  7. Yogurt
  8. Salt
Process:
  1. Add all the items in the grinder:
    1. Spinach - blanch or without
    2. Cumin seeds
    3. Little ginger
    4. Couple cloves of garlic
    5. Some yogurt
    6. Couple green chilies
    7. Some water - thicker is better
  2. Grind till smooth - add more water if required
  3. Add some salt to the paste
  4. In a bowl, add flour, and a little bit of oil
  5. Add the spinach paste to the bowl a little at a time and mix it with the flour
  6. Keep adding spinach until the dough is kneaded well
  7. Let the dough rest for 20-30 minutes
  8. Make small balls from the dough, the size of your palm, and start making paratha
  9. Use little oil or ghee while cooking them on pan

Moong Dal Chilla

Ingredients:
  1. Whole Green Moong Dal
  2. Ginger
  3. Garlic
  4. Green chilly
Process:
  1. Soak dal over night - 75% of target bowl size
  2. Throw over the water and wash the dal thoroughly
  3. Add all the items in the grinder
    1. Little piece of ginger
    2. ⁠1 garlic clove
    3. ⁠1 green chily (preference wise)
    4. Some water - thicker is better
  4. Grind till smooth
  5. ⁠Add little salt
  6. Get one ladle full of batter and put it on a hot pan on medium flame
  7. Let it cook by covering it with a lid
  8. Add some oil or butter or ghee
  9. Let it sit for 3-4 minutes on each side
  10. Have them with any curry or ketchup

Moong dal chila recipe

It's so simple and delicious and takes very less time. It is really rewarding to cook and taste it.

Serving size: 2
Ingredients:
  1. Split yellow Moong Dal
  2. Ginger
  3. Green chilly
  4. Carrot
  5. Coriander leave (optional)
Preparation:
  1. Start with soaking 1 cup of moong dal in water over night or for around 3 hours
  2. Once it's ready, rinse with fresh water
  3. Add 2 small green chillies and a small block of ginger into grinder and slowly add all the dal to the grinder.
  4. Grind dal into a paste and add litte water to make the grinding process smooth. Thicker the paste, the better the consistency for the chila.
  5. Grate a medium sized carrot into the paste.
  6. Add finely chopped cilantro/ coriander leaves to the paste.
  7. Add salt, chilli powder and cumin seeds powder into the paste based on your taste.
Cooking:
  1. Heat the dosa/ chapati pan. Add a tiny amount of ghee/ cooking oil to the pan.
  2. Once the pan is hot, add the batter/moong dal paste to the pan and spread it across the pan to make it look like a dosa.
  3. Add another round of tiny amount of ghee or oil on the edges of the dosa.
  4. Cover the pan with a lid for around 2-3 minutes on medium flame (5-6/10)
  5. Flip the dosa to the other side and let it cook for another minute.
  6. Remove it from the pan and it is ready to eat
Serving:

Have ~2.5 dosas for breakfast with -

  1. Any vegetable/ curry
  2. Pickle
  3. Yogurt
  4. Mint/ any chutney
  5. Ketchup
